Canada started strong and took the first set 25-18 before Poland rebounded and took the next three 25-20, 25-23 and 25-21.
Polish outside hitter Bartosz Bednorz was match top scorer with 19 points.
Canada is now 1-1 in VNL play after opening with a 3-1 win over Turkey on Tuesday.
Canada next plays Bulgaria on Friday.
The 12th-ranked Canadians have already qualified for the 2024 Paris Olympics after a second-place performance in the Olympic Qualifier pool last year.
